There are 4 screws on EACH "clamp". If you remove these the headlight will all but fall out, but the screws can be very difficult to get loose because the sometimes rust up and you can't get them to break loose. I would suggest taking the Ranger to an auto parts store to have them changed. Some places around here will install them ...

Check the brake light switch, It is located on the brake pedal itself and might have gone bad. There might be two switches, but they are easy enough to look at.

To my knowledge (for what it is worth) Ford never used a warning alarm like you have described. It makes me think that some former owner dropped some battery opperated device in the defroster duct and now the battery is about to go dead and is warning you that it needs to be replaced.
Just an idea that came to me.

One other thing that it could be is either the float is stuck in the carb, or the needle and seat are gummed up. Either way, a carb rebuild should take care of the accelerator pump and also the needle and seat. And don't skimp on the float, it can make the difference between an "ok" rebuild and a great one.

It sounds to me like you have major engine problems. When the oil pressure drops, does the engine "rattle" or make any other kind of noise?
